Farm to Cup Coffee Workshop
with Ringo Lam

Founder and Head Roaster of LCC Roastery, Ringo has been roasting coffee for the Lantau community since 2017. In 2019, he began cultivating coffee trees from germinated seeds collected during a trip to Panama. Since then, more than 20 farmers have joined the initiative, growing over 400 coffee trees on the island. In 2022, Ringo established the Lantau Coffee Co-operative to further promote this endeavour, serving as its driving force. He holds a Certified SCA Coffee Diploma and is an SCA Roasting Professional.

In this workshop, participants will:

  • Discover the Journey: Learn about coffee cultivation, harvesting, and processing techniques directly from local experts in the field.

  • Hands-on Processing Experience: Get involved in the coffee processing methods, gaining practical knowledge of how different techniques affect the final product.

  • Tasting Sessions: Engage in guided tastings to savour the unique flavours and aromas resulting from different growing regions and processing methods. Get to try coffee from the local region, including beans grown on Lantau Island.

  • Roasting Techniques: Learn about coffee roasting and its impact on flavor. Participants will roast their own 100g of beans to take home, understanding how roast levels influence the final cup.
